I usually try to keep things separated when sharing recipes, but this was such a simple yummy dinner I thought I'd just share it as one big post! I just made up the chicken on my own, and used a new garlic bread recipe for a fun change of pace. Variety is the spice of life, right?
Chicken Pesto Ingredients
3 chicken breasts
2 Tbl pesto
Roasted Broccoli Ingredients
2 heads broccoli
2 cloves garlic
1 Tbl olive oil
salt and pepper to taste
1/4 cup parmesan cheese
1 Tbl lemon juice
Garlic Bread Ingredients
6 slices of Italian bread
1 stick of butter
2 cloves garlic
1 tsp garlic powder
1/4 cup Parmesan cheese
Directions
I used frozen chicken breasts because this was sort of a last minute dinner idea and I hadn't thawed any chicken out. So I preheated the oven to 425 and needed to bake the chicken for 55 minutes. Once I got the chicken in the oven, I began preparing the broccoli.
Clean the heads of broccoli and chop to preferred size. Chop the garlic cloves. Place in baking dish with olive oil and chopped garlic cloves and toss until well coated. Sprinkle with salt and pepper to taste. The broccoli needs to bake for about 20 minutes, so once the chicken has been baking for 35 minutes add the broccoli into the oven and remove the chicken.
Quickly coat the chicken in pesto (the outside of the chicken should be baked by now) and return to oven.
Then begin the garlic bread! First chop the garlic cloves. I have a small food processor which is very handy for things like the garlic bread. I placed the butter, a little cheese, and chopped garlic into this small processor and blended. Then spread onto the 6 pieces of bread and sprinkle the garlic powder and leftover cheese on top of the butter spread. Add the bread to the oven when there is about 7 minutes left to the cooking time for chicken and broccoli. Then everything is ready at once! Super easy and super yummy!
