Qunioa spinach salad with maple vinaigrette

Time for something healthy and yummy!!! This is great as a side dish or if you eat enough, it can also be a meal, maybe with a side of bread :)

What you need:
1 cup of quinoa
1 bag of baby spinach
1 medium apple, chopped
pecans
goat cheese (to your liking)

Dressing:
3 T Olive Oil
2 T Balsamic Vinegar
1 T Maple Syrup

To cook quinoa place one cup of water and one cup of quinoa over high heat on the stove. Once it begins boiling, turn to low and let sit for approximately 20 minutes or until all water is gone.
While the quinoa is cooking, place spinach, apple, pecans and goat cheese in a large bowl and mix. Then, in a separate bowl, mix together the olive oil, balsamic vinegar, and maple syrup. Once quinoa is done add it to large bowl of salad and mix then drizzle with dressing!

Easy peasy and delicious :)
