Blueberry Waffles with Blueberry Compote

So, I made some of the most delicious waffles I've ever eaten the other day for my husband's birthday! He loves waffles, so I thought I'd break out the new waffle iron. My original plan was to make these the morning after we got home from our honeymoon so that we could have our first ever morning at home together started off with something special....but when I opened the waffle iron it was broken :( So, my plan of being an amazing new wife was crushed quickly. However, a birthday surprise is just as good, right? After tasting these, I think I have been put back into five star cooking wife category haha


Waffle Ingredients
2 eggs
2 cups flour
1 3/4 cup milk
1/2 cup vegetable oil
6 Tbl white sugar
4 tsp baking powder
1/4 tsp salt
1 tsp vanilla
1/2 tsp cinnamon
1 cup blueberries

Directions
Whisk together the two eggs in a large mixing bowl until fluffy. Then add in the flour, milk, oil, sugar, baking powder, salt, vanilla, and cinnamon. Whisk until completely mixed, it will be a very wet, but fairly thick texture. (I actually used evaporated milk because I didn't think almond milk would work and it turned out great still) Wait for ten minutes, then fold in the blueberries. Scoop mixture onto waffle iron and cook! I began cooking the compote while I waited for the ten minutes and it was basically perfect timing for everything when making 4 waffles.

Compote Ingredients
1 cup blueberries
2 Tbl water
1/4 cup sugar
1/2 Tbl lemon juice
1 1/2 tsp vanilla

Directions
Place the blueberries, water, sugar, and lemon juice into a small saucepan. Mix continuously on medium heat until the mixture begins to boil. Once the mixture boils watch for the blueberries to burst, the skin will sort of come off and the mixture will become dark blue. Once this happens, lower the heat to medium low (2ish on my stove) and let simmer until waffles are ready. This gives the compote time to thicken. Once you have the last waffle on the iron, remove from heat and add the vanilla. Mix together and pour while still warm onto the waffles. Lastly, add a dollop of whipped cream!



The compote was adjusted from Pink Pistachio and the waffles from Sweet Peas Kitchen
