Mediterranean Pasta

Because I can't really think of a better name for this pasta, I just sort of made one up. If you can think of a better name after reading this, please let me know. This is a pasta dish with a Mediterranean feel that I tweaked from a recipe I found on pinterest at the blog A Small Snippet. I ended up changing it quite a bit in the end, but it still ended up very tasty!! So, here it is :)



Ingredients
1 box pasta
1/2 jar of sundried tomatoes
1 bag of baby spinach
1/2 can of artichoke hearts
2 Tbl olive oil
1 chicken breast (or more if there is more than one meat eater in your house)
seasoning to your liking

Directions
I began by boiling a large pot of water. Once the water came to a boil, I added the pasta. While the pasta was cooking. I drained the sundried tomatoes, saving the oil for later, and cut up the chicken breast. Once I cut up the chicken breast I placed it in a medium pan over medium heat with the olive oil. I added garlic salt, crushed red pepper, and italian seasoning to the chicken breast, because that is what Josh likes, but you can add whatever you like. Once the chicken is cooking, and the pasta had about a minute left, add the tomatoes, spinach, and artichoke hearts to the boiling pasta.

After the minute of cooking, drain the pasta and veggies into a colander and then dump into a bowl. Remove chicken from heat after fully cooked. Add in the oil from the sundried tomatoes, some garlic powder, salt, and pepper to taste to the pasta bowl. Finally add chicken to the pasta if everyone is eating it, or just to the plate of your choosing. And there it is folks, an easy and tasty dinner! We added some simple salad to ours for something extra :)
