Roasted Red Pepper Pasta

This is one of our favorite meals! I didn't have  a blog when I first tried making this recipe, but it turned out so yummy and pretty that I decided to take a picture. That worked out well so that I can use it now. Since it has been so hectic between visiting Arizona for a week and then going to Iowa for apartment/house hunting, we haven't even had a real home cooked meal in what seems like weeks. Once we finally get settled again I'm going to need a cleanse haha I am hoping that the rest of this week and most of next will be a little more normal because we plan to move next Friday! I can't believe how soon that will be, but we are super excited :) So, for the next week I am hoping that we will just be able to pack and see people before we go. Anyway, I wanted to share this with you so you can try it yourself because if you like peppers, this is a winner!



Ingredients
1 red pepper
1 orange pepper
2 Tbsp minced garlic
1/4 tsp dried basil
3 Tbsp olive oil
1 1/2 cups half and half
1 tsp cornstarch
1/3 cup grated cheese of your liking (we chose parmesan)
2 Tbsp butter
salt and pepper to taste

Directions
Preheat broiler. While it is preheating, wash the peppers and clean the seeds out. Cut the peppers in half and place cut side down on a cookie sheet. Brush with olive oil and place in the broiler for about 5-10 minutes or until skin looks blackened. Remove from the broiler and peel off as much skin as possible, mine didn't all come off. Chop the pepper into small pieces and place in a skillet over medium heat with olive oil, garlic, and basil. Cook for about 10 minutes.

Once this is complete, place the mixture into a blender. In a small bowl mix together the corn starch and half and half until there are no lumps. Then add into blender. Mix to desired consistency, ours was pretty chunky. We like it a little more smooth, so next time we will blend longer. Then place the mixture back into the skillet and cook until it boils. Add half and half to the desired consistency. Then add cheese and stir until it melts. Last, add the butter, salt, and pepper. Simmer for five minutes. Pour over pasta of your choice.

The breadsticks were a knock off Olive Garden recipe that turned out great, I will share that one later :) So yummy as well! The asparagus was just sauteed with a little olive oil and spices!
